Burgundy Truffle (Tuber Uncinatum)

burgundy_truffle_10341962The burgundy truffle (Tuber uncinatum), harvested in southern Italy, is essentially the exact species of truffle that the Italian summer truffle is. These truffles ripen between September and December and their flavour is more robust, perhaps because of their later maturation. They closely resemble summer truffles in their exterior, but the interior flesh is lighter in colour with milk chocolate-brown flesh mottled with white veins. The taste of the burgundy truffle is similar to that of the summer truffle, but has much more flavour. These truffles are at their best when used uncooked and are shaved raw over pasta, egg and potato dishes, rice and as a finishing touch to sauces.
