Summer Truffle (Tuber Aestivum)

summer_truffle_11919690The exterior of a summer truffle (Tuber aestivum) ranges from a light to a dark brown colour with defined large wart-like bumps in a polygon form. Beneath the rough skin lies the flesh, ranging from ivory white to dark chocolate mottled with white veins. Summer truffles can be found throughout much of central and eastern Europe, but are commonly imported from France and Italy. They are harvested during the spring and summer months. These truffles have a very delicate flavour and aroma, which develop quickly as the season progresses, with hints of earthiness, chocolate and hazelnuts. They should be very hard to the touch with no suggestion of softness.
