Mostly found in Piedmonte, a northern Italian region, and particularly in Alba, which is the most important kind. White truffles are harvested from October to January. The white truffle is characterised by a whitish exterior that can be almost light brown with streaks of pink and has a very unique and special aroma. The most aromatic and flavoural of all truffle species, the white truffle is never cooked and only served fresh as it is far too delicate for cooking.
